There's a fundamental difference between a cup of coffee you instantly forget and one you still remember in the evening. This difference starts long before extraction: it starts with the bean.

What specialty coffee really is

The term "specialty coffee" is not a marketing ploy: it is a rigorous international classification, established by the Specialty Coffee Association (SCA), the global reference organization in this sector.

To bear this title, a coffee must score at least 80 points out of 100 in a standardized evaluation conducted by a Q-Grader, an expert certified by the SCA. This rating is based on precise criteria: aroma, flavor, aftertaste, acidity, body, balance, uniformity, and absence of defects. The coffee is also evaluated according to exact preparation conditions (water temperature, dosage, brewing time), guaranteeing scientific reproducibility.

In figures : a coffee rated 80 to 84.99 is considered "very good specialty"; 85 to 89.99, "excellent"; above 90, "exceptional."

Specialty coffee represents less than 2% of global production. It is a rare product, selected at every link in the chain — from the cultivation plot to the cup — and evaluated according to standards that apply worldwide.


Whole bean: a natural safeguard for aromas

Roasted coffee is a chemically living product. During roasting, the beans undergo Maillard reactions, caramelization, and pyrolysis that generate a remarkably complex aromatic palette. Researchers have so far identified over 850 volatile aromatic compounds in freshly roasted coffee.

These compounds — aldehydes, ketones, furans, pyrazines — are extremely fragile. As long as the bean remains whole, its dense and compact structure acts as a natural barrier that protects them from ambient oxygen. The carbon dioxide (CO₂) accumulated during roasting and slowly released from within the bean also plays a protective role: it creates an atmosphere that repels oxygen and delays oxidation.

Reducing oxygen content in the coffee's environment to just 0.5% can extend its shelf life by up to 20 times. The whole bean, by its natural architecture, achieves precisely this.


Grinding on demand: why it changes everything

As soon as the bean is ground, everything changes. The contact surface between the coffee and ambient air increases considerably: each particle exposes its volatile oils to oxygen. Oxidation begins immediately, and aromatic degradation is rapid.

A study published in the Journal of Agricultural and Food Chemistry by Akiyama et al. (2003) showed, via gas chromatography coupled with mass spectrometry, that grinding instantly releases a rich bouquet of nutty and roasted coffee aromas — but that these volatile compounds are also the first to disappear upon contact with air.

Comparative data are striking. A study by the French Institute of Research on Coffee and Cacao (IRCC), published by CIRAD, established that ground coffee stored in the open air is only acceptable for about 8 days.

The same study notes that ground coffee consumes approximately 40% more oxygen than whole beans, thereby accelerating the oxidation of aroma-responsible compounds.

The SCA, in collaboration with the Zurich University of Applied Sciences (ZHAW), confirms these findings: subtle notes (floral, fruity) disappear first, giving way to flat, sometimes metallic coffee.

Grinding your coffee just before preparation is therefore about releasing its aromas at the right moment — and only at that moment.

It covers the precise geographical origin (country, region, farm or plot), the fruit processing method, agricultural practices, and roasting method.

It guarantees the authenticity of the product, allows for quality evaluation at each stage of the chain, and ensures compliance with production conditions. Labels and certifications — organic farming, Rainforest Alliance, and others — are traceability tools whose acquisition requires precise documentation and rigorous controls.

For the consumer, traceable coffee isn't just "of Ethiopian origin" or "from Brazil": it's coffee whose farm, processing, and roaster are known. It's knowledge that transforms the act of drinking into an act of trust.


An aromatic profile preserved in its fullness

The aromatic profile of a coffee — notes of chocolate, hazelnut, citrus, red fruits, or caramel — is the result of a delicate balance between several hundred chemical compounds. Scientific studies have shown that aldehydes, anhydrides, ketones, and furans are positively correlated with desirable sensory attributes of coffee.

These compounds are also the ones that degrade most quickly in open air. An IRCC study shows that the content of 4-vinylguaiacol — an essential aroma compound — decreases by about 60% in 30 days in ground coffee stored under normal conditions, compared to about 25% in 3 months for whole bean coffee.
